This “Heathier” Rotel Cheese Dip recipe is here to save the day. This recipe ditches the Velveeta in favor of colby jack and cream cheese with a touch of turmeric for the familiar yellow color. Made with just a few simple ingredients, it’s the perfect blend of cheesy, creamy goodness and just the right amount of kick from the Rotel tomatoes that will have everyone coming back for more. It’s so easy, even a sleep deprived trivia team on hour 45 can make it.
Ingredients:
- 8oz – Cream Cheese
- 8oz – Colby Jack Cheese – Shredded
- 1/4 c – Milk
- 1/2 tsp – Salt (or more to taste)
- 1/4 tsp – Ground Turmeric
- 1 10oz Can – Original Rotel Diced Tomatoes – undrained
Directions
- Set crockpot to low.
- Add the 8oz block of CREAM CHEESE and the 1/4c MILK. Cover and let warm to melt about 30 minutes. If your crockpot is wide and shallow, stir if needed before the 30 minutes is up to prevent sticking or burning.
- Help your teammates answer some trivia questions.
- Once the cream cheese is softened after warming for 30 minutes, mix until smooth.
- Stir in 8oz SHREDDED COLBY JACK CHEESE, 1/2tsp SALT, and 1/4tsp TURMERIC. Cover again and let the cheese melt 30-45 minutes. Stir if needed before the time is up to prevent sticking or burning.
- Man the phone line and call in some answers to the phone bank for the team. You’re a redial champion. Say hi to Idaho, Not Wearing Pants, and Hello Nurse.
- Once the colby jack cheese is melted, mix until smooth.
- Stir in 10oz can UNDRAINED ROTEL DICED TOMATOES.
- Cover again and let warm for 45 minutes – 1 hour. Stir if needed before time is up to prevent sticking, but it should be unnecessary by this point.
- Answer some more trivia questions. Stare into the middle distance. Question the nature of your reality.
- Once the cheese is fully melted and the Rotel is warmed and evenly mixed, it’s time to eat! Enjoy with chips and veg as a dip or drizzled on top of a 3am chili omelet. Time and dietary discretion has no meaning on trivia weekend.
Recipe notes:
- Unlike the Velveeta, this real cheese version of the recipe will thicken and cook down slowly over time. We have had it at a holding temperature for 8+ hours, and it can get a little thick. It can be reinvigorated and thinned back down to the correct texture by adding a a little milk and mixing it back to a smooth consistency.
- You can just dump everything in the crockpot and leave it covered for an hour or so to melt then mix it. It can be a little bit grainy having the acidic tomato in the dairy while melting but if you don’t have the time or team capacity to be up and down mixing in stages, just dump and go.
